Pasta with Cannellini Beans and Spinach
I threw together this dish with some leftover penne and some fresh spinach and basil from our garden.
Garlic – minced
Bunch or bag of spinach
Can of cannellini beans -rinsed and drained
Slices of roasted red peppers
Salt and pepper
Red pepper flakes
Grated parmesan cheese
Heat oil in skillet, cook garlic until lightly browned. Add in the cooked pasta and beans and heat through. Add the spinach until it starts to wilt, then add in the basil. Salt and pepper to taste along with some red pepper flakes. Serve with shredded cheese.
