This is a beautiful and refreshing simple side salad to go along with your meal. Avocados have healthy fats and oils that we all need to keep a balanced diet.

Pomegranate and Avocado Salad

1 Avocado
1/4 Pomegranate, seeds taken out
1 Teaspoon sugar
1/2 Teaspoon olive oil
1 Teaspoon rice wine vinegar
Cut the avocado in half and remove it from it’s skin in one piece (a spoon is the best implement for this). Place in a bowl or on a plate. Sprinkle pomegranate seeds over the avocado halves. Pour the sugar, oil and vinegar over the halves, and let sit for a few minutes before serving.
